Red Star Côte des Blancs (Davis 750) is a strain of Saccharomyces cerevisiae developed through a selection by the Geisenheim Institute in Germany. Known for its slow fermentation profile, it mirrors the Geisenheim Epernay strain but generates less foam, making it a practical choice for winemakers. This yeast excels in producing fine, fruity aromas, particularly in reds, whites, sparkling cuvées, and non-grape fruit wines like apple. It performs best at temperatures between 17°C and 30°C (64°F–86°F) and is sensitive below 13°C (55°F). Côte des Blancs often requires nutrient supplementation, especially for chardonnay fermentations, and can be managed with lower temperatures to retain some residual sugar for a balanced finish.

To use, rehydrate the yeast in 10 times its weight in 86°F–95°F water for 20–25 minutes. Gradually adjust the temperature by adding small amounts of must every 5–10 minutes before incorporating the mixture into the fermentation tank with thorough mixing. Available in 10 kg boxes or 500-gram packets, the recommended dosage is 2.2 lbs per 1000 gallons. This yeast carries no hazard warnings, ensuring safe handling for both home and professional use.
