Red Star Premier Blanc, a robust strain of Saccharomyces bayanus, was selected by the Pasteur Institute of Paris and is widely embraced in the United States for its versatility. This all-purpose yeast excels as an exceptional fermenter, thriving even in extreme conditions to produce a broad range of wines. With an impressive alcohol tolerance of up to 18% vol., rapid fermentation kinetics, and low production of volatile acidity and acetaldehyde, it’s a powerhouse performer. Premier Blanc operates effectively across a wide temperature range (10°C–35°C, 50°F–95°F), resists low temperatures, and requires minimal nutrients. Its moderate foaming, sulfite tolerance, and strong fructose assimilation make it a standout choice.

This yeast respects varietal aromas, gently enhancing fresh, clean profiles with subtle boosts to thiols and terpenes. It’s perfect for high-volume wine production, crafting high-alcohol reds and whites with vibrant, varietal character. Premier Blanc is also a top pick for preventing or rescuing sluggish fermentations and restarting stuck ones, thanks to its ethanol and SO2 resilience. It’s highly recommended for sparkling wines made via traditional or Charmat methods. To use, rehydrate in 10 times its weight of 30°C–35°C water for 20 minutes, then gradually add must to acclimate, keeping temperature differences below 10°C (ideally 5°C). After a 10-minute rest, blend into the must. Dosage is 20–30 g/hl (average 2.2 lbs per 1000 gallons). Packaged by Fermentis, a Lesaffre Yeast Corporation division, it offers a 4-year shelf life unopened at room temperature, or 4 weeks refrigerated once opened.
